Avocado on toast was once one in all my go-to breakfasts prior to I were given into the entire low carb factor. But this Mexican Omelette has added smashed avocado again into my repertoire.

Recently I’ve been having a little of an avocado rediscovery.

And was once impressed one evening to check out it smashed onto an omelette for a fast solo dinner.

Talk a couple of winner.

Love how the egg paperwork the bottom to carry some of these scrumptious Mexican flavours in combination.

Mexican Omelette with Smashed Avo

  • 2-Three eggs
  • 1 small avocado or half huge
  • half lime
  • sizzling sauce to serve
  • handful roast cashews / almonds
  • small bunch coriander (cilantro), leaves picked
  1. Mix eggs in a small bowl with a pinch of salt. Heat a small frying pan on a medium top warmth.

  2. When the pan is heat upload a dash of olive oil and swirl to coat the ground of the pan. Add eggs and make allowance to cook dinner gently till now not runny. If they begin to sizzle swiftly, flip the warmth down. You need the eggs to cook dinner gently so that they don’t over cook dinner.

  3. When the eggs are simply set, roll the omelette onto a plate. Top with avocado, damage the avo somewhat with a fork and squeeze over some lime juice. Sprinkle over sizzling sauce and end with a flourish of coriander leaves and the roast nuts.

WINE MATCH: A crisp dry white like Riesling or a chilly Dos Eqquis beer.

Mexican Omelette Variations & Substitutions

nut-free – simply skip the nuts or substitute with further avo or some roast veg or cooked chickpeas. Or collapse over some feta or goats cheese.

extra really extensive (carb fans) – sizzling buttered toast or heat tortillas.

extra really extensive (low carb) – further avo, further eggs or further nuts.

Low FODMAP – substitute avocado with bitter cream.

family-friendly – skip the new sauce.

other herbs – mint, basil or parsley. A small quantity of chopped chives or tarragon would even be delish.

no avocado – bitter cream, hummus, roast eggplant, grilled zucchini, cherry tomatoes, almond hummus.

egg-free – serve those mexican flavours on a slice of toast or on a bowl of stunning broccoli. Increase the nuts to make it extra really extensive.

Waste Avoidance Strategy

eggs – will stay within the refrigerator for weeks or use for some other meal.

avocado – use for some other meal. Don’t freeze.

lime – will stay in a plastic bag within the refrigerator for months.
sizzling sauce / roast cashews / almonds – stay them within the pantry.

coriander – perfect to make use of for some other meal. Can be frozen however will wilt when defrosted.
